Vermentino 80%, white Grenache 10%, grey Grenache 10%.
Terroir: a single plot in St Jean de Bébian, Pézenas, on a soil with rolled pebbles.
Harvest: manual, yield 40hl/ha.
Vinification & Maturing: whole bunch pressing, cold settling, followed by a temperature controlled fermentation. Vinification and ageing for 30% of the wine in acacia barrels, with stirring of the lees for 2 months.
Tasting notes: delicate and flowery with notes of freshly cut pear, star anise, fennel and candied ginger. The palate is ample, but balanced with a nice freshness on the finish.
Can be served with Asian food such as duck or steamed bites.
