Carignan noir (75%) old vines of 50 - 65 years and Grenache and Syrah of 14 years
Terroir: the plots are located on three terraces, facing east at an altitude of 120m in Caux. Soil of basalt scree, silt and Villafranchian gravel.
Harvest: manual, yield 20 hl/ha.
Vinification & Maturing: de-stemming (without crushing), and vatting by gravity. Traditional fermentation with some delestage and pigeage, followed by a 14-day maceration. Aged in concrete tanks.
Tasting : Deep purple colour. On the nose, notes of small black fruits, liquorice and garrigue. On the palate, this wine is round and generous, balanced by a nice freshness. The finish is on black fruits and sweet spices.
Appellation : The cuvée "Les Trois Terrasses" is claimed as IGP simply because of the dominance of carignan in the blend. The whole of our estate is in AOC Languedoc.
To be enjoyed with poultry such as duck breast or rabbit.
