Terroir : The parcel is located on a west-facing slope in Caux, on a clay-limestone soil with basalt.
Harvest: manual, yield 20hl/hectare. Sorting in the vineyard.
Vinification & Maturing: whole bunch pressing, cold settling, followed by a temperature controlled fermentation. On lees for 21 days, matured in vats.
Tasting notes: On the nose, notes of wild fennel, verbena and pear. On the palate, exceptional minerality, citrus notes (lime), a fresh and slightly peppery finish.
